Beetroot salad

Create a refreshing homemade salad, made with Koukakis Farm Greek Yoghurt

Ingredients:

  • 500g boiled beetroot or canned beetroot
  • 500g Koukakis Farm Greek yoghurt
  • 100ml olive oil
  • 100g nuts
  • 50ml vinegar
  • Salt & Pepper
  • 2 cloves of garlic
  • Parsley

Implementation:

  1. Cut the beetroot and add them into a bowl
  2. Add the yoghurt in another bowl
  3. Add olive oil, vinegar, garlic cloves, salt and pepper
  4. Mix until thoroughly combined
  5. Add the nuts and the yoghurt mixture in the bowl with the beetroot
  6. Mix until thoroughly combined

Serving:

  • Serve the beetroot salad on a plate
  • Add chopped parsley as garnish
